Job Description Head Cook Report to : HR Manager/Operation Manger To development menus & recipes, food purchase specifications and all food production including that used for restaurant, banquet function and other outlet and maintain highest professional food quality and sanitation standards. Duties and responsibilities   Plan menus of for all food outlet in the restaurantSchedules and coordinates the work of cooks and other kitchen employees to assure that food preparation is economical and technically correct and within budgeted labour cost goals.Raises the requisition of product other necessary food suppliesEnsure that high standards of sanitation, cleanliness and safety are maintained throughout all kitchen areas at all timesEstablishes controls to minimize food and supply waste and pilferage.Safeguard all food preparation employees by implementing training to increase their knowledge about safety, sanitation and accident prevention principle. Support safe work habits and a safe working environment at all timesDevelops standard recipes and  techniques for food preparation and presentation which help to  ensure constantly high quality and to maximize food cost; exercise portion control for all item served and assist in establishing menu selling price.Prepares necessary data for applicable parts of the budget; project annual food , labor and other cost and monitors actual financial results; take correction action as necessary to help assure that financial goal are met.Liaise with head of food and beverage in food costingattend food and beverage staff and management meetingCooks or direct supervises the cooking of items that requires skillful preparationEnsure proper staffing for maximum productivity and high standard of quality, control food and payroll cost to achieve maximum profitabilityInteract with food and beverage management to assure that food production consistently exceed the expectation of members and guestInterview, select, train, supervise, counsel and discipline all employees in the department in consultation with head .food and beveragePerform other duties as directed by the restaurant  Knowledge and skills required; The job holder must possess; Education experience; Diploma/ Cert in food production from Kenya Utalii College.Maximum 2 years  relevant work experience ; of which 3 should be without close supervision and leading a team in either a reputable 4 star hotel or private member restaurantExperience in kitchen n managementKnowledge in industry regulation compliance/law Competencies and skills Ability to produce high volume f work in a timely manner ,which is accurate ,complete an d of high qualityPlanning , negotiation and decision –making skillsPosses creativity and innovation skills
