Reports to: Operations Manager Duties and responsibilities 1.Responsible for all costing of menu items 2.Responsible for monitoring the Food and Beverage operations to minimize pilferage and theft. 3.Oversees the stock orders and movement from stores 4.Ensures that food and bar costs are computed on daily basis with all support documents. 5.Supervises the F&B Control staff and provides assistance and guidance to all staff under him/her 6.Responsible for recording of cashiers and barmen’s shortages and forwarding them to the accounts office on a monthly basis. 7.Close liaison with purchaser in order to obtain best quality and prices 8.Ensure and audit from time to time that official orders have been issued for all goods brought into the hotel 9.Ensures that menus are cost at regular intervals 10.Liaises with the stores department to ensure that all beverage items required are available 11.Liaises with Chef the correct portion control in food 12.Ensure that daily and monthly stocks (including cutlery) are taken and responsible for the input in the system 13.Provide sales analysis of items by restaurants on a monthly basis 14.
